Our story

Ollin is a family-owned winery dedicated to crafting premium small-batch wines in the heart of the Barossa Valley. Rooted in the meaning of "Ollin"—the essence of movement and the interconnectedness of all things—we create wines that reflect the natural flow of life and the rich heritage of the region. Each bottle is a celebration of quality, connection, and the journey that brings us all together.

Our Team

Jaysen started his winery career with St Hallett Wines, just down Krondorf Road from the Ollin tasting room. After spending time with local Barossa wine businesses, he established the winery Massena in the 2000 vintage. Most recently he has been making wine under the JC’s Own label, which has included several vintages overseas as part of a winemaking journey that continues to this day. He currently consults to a collection of premium wineries and is mentoring his daughter, Finella, who is just starting her winemaking journey. The Ollin wine style has evolved with him over the years and is in constant movement to capture wines that are expressive and of interest texturally as well as aromatically.

Jaysen Collins

Tracy has been an entrepreneur from an early age, creating businesses in accomodation, styling, fashion and beauty. Whilst managing these businesses and raising three children, she appeared on two seasons of Masterchef and opened the popular Harvest Kitchen restaurant in the Barossa Valley soon after. Not one to rest on her laurels, she is near completion of an honours degree in Cognitive Neuroscience, which will lead her onto a Masters in the field of Psychology. Tracy has aways been creative, with her artwork and typography adorning the Ollin wine labels. Tracy’s connection to the community, creativity and her attention to the aesthetic plus her amazing food knowledge and palate all contribute to the tasting experience we offer at Ollin.

Tracy Collins

Finella is in her final year of her winemaking degree at Adelaide University. Having helped out in the cellar since with Jaysen and his JC’s Own wines since she was able to walk, Fin has gathered a lot of experience across her short time in the industry. Having worked in wine retail in Adelaide and tasting rooms in the Barossa, she has winery and cellar experience at Rusden Wines in the Barossa, Sidewood Estate in the Adelaide Hills and Forlorn Hope Wine in California in the USA. Fin’s influence on the Ollin Wines can be seen in the Rosé, Chardonnay and Balto Red Blend, showing her keen sensory ability in blending and finishing wines.
